This is a kind of croque madame adapted to the ingredients I had in the fridge. Last year I tried croque monsiuer and I really liked it, I wanted to try croque madame cause I heard it's incredibly tasty and it was. Croque madame is a gratin sanwich made with bechamel sauce and usully served with an egg on top.

Bechamel sauce

  • 20 g butter
  • 20 g flour
  • 200 ml milk
  • a pinch of salt


  • 4 slices of bread
  • 100 g Cheddar cheese
  • 70 g ham
  • 50 g mozzarella
  • 2 tsp butter
  • 2 eggs
  • 1 tbsp olive oil


Bechamel sauce

  • In a saucepan, melt the butter. After it has melted, add the flour, mix, and then add the milk gradually and mix until the composition thickens. At the end add salt.


  • Grease each slice of bread with butter. Add Cheddar cheese, ham and a slice of bread. Over the slice of bread on top add Bechamel sauce and grated mozzarella. Put the sandwiches in the oven for 10-15 minutes at 180 ° C.
  • Heat a pan, add the oil and fry the eggs, but not too much, just enough to keep them soft. Remove the sandwiches from the oven and add an egg on top. Optionally you can also add greens or pepper.
