Strawberry jam Cupcakes

A cupcake is a small cake designed to serve one person ,which may be baked in a small thin paper, aluminum cup or silicone molds. As with larger cakes, frosting and other cake decorations such as fruit and candy may be applied.
 Cupcakes have been around since the late 1700’s. The first mention of the cupcake can be traced as far back as 1796, when a recipe notation of “a cake to be baked in small cups”was written in American Cookery by Amelia Simms. The earliest extant documentation of the term cupcake itself was in "Seventy-five Receipts for Pastry, Cakes, and Sweetmeats" in 1828 in Eliza Leslie's Receipts cookbook.
In the early 19th century, there were two different uses for the term cup cake or cupcake. In previous centuries, before muffin tins were widely available, the cakes were often baked in individual pottery cups, ramekins, or molds and took their name from the cups they were baked in. This is the use of the name that has remained, and the name of "cupcake"is now given to any small, round cake that is about the size of a teacup. The other kind of "cup cake" referred to a cake whose ingredients were measured by volume, using a standard-sized cup, instead of being weighed. Recipes whose ingredients were measured using a standard-sized cup could also be baked in cups; however, they were more commonly baked in tins as layers or loaves.
In later years, when the use of volume measurements was firmly established in home kitchens, these recipes became known as 1234 cakes or quarter cakes, so called because they are made up of four ingredients. It went something like this: one cup of butter, two cups of sugar, three cups of flour and so on
A standard cupcake uses the same basic ingredients as standard-sized cakes: butter, sugar, eggs, and flour. Nearly any recipe that is suitable for a layer cake can be used to bake cupcakes.
Today, cupcakes come in a variety of flavors and styles. From buttercream-frosted cupcake bouquets to fondant-designed themed cupcakes, this dessert is loved by everyone. Bridal showers, baby showers, national and traditional holidays, and more, there is no occasion for which a cupcake cannot be baked.
I do like cupcakes and I really like to decorate the cupcakes, I also love to try different combinations when it comes to this dessert. This time I tried filled cupcakes, I use some strawberry jam for filling and I made a chocolate frosting with mascarpone. The combination was incredibly tasty, I just loved it! I promise you will love it too!

  • 310 g flour
  • 150 g sugar
  • 10 g baking powder
  • 1 tsp salt
  • 100 g butter
  • 220 g milk
  • 150 g 10% fat Greek yoghurt
  • 3 eggs
  • 80 g chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp lemon extract

Filling & Frosting

  • 100 g strawberry jam
  • 150 g liquid cream
  • 150 g chocolate
  • 250 g Mascarpone cheese



  • In a large bowl mix the flour, sugar, salt and baking powder and mix.
  • Melt the butter, let it cool for 10-12 minutes. Add the eggs one by one and mix. Add the greek yoghurt and mix. Pour the composition over the flour mix and mix. You can use a mixer or a whisk.
  • Gradually add the milk while you mix. At the end add the vanilla and lemon extract and the chocolate chips.
  • Add the composition in cupcake silicone molds or paper forms and put the molds in a cupcake tray. Bake everything in the preheated oven at 180 degrees for 15-20 minutes.

Filling & Frosting

  • After the cupcakes are baked, let them cool for 10-15 minutes. Make a hole in the center of cupcakes using a spoon or whatever makes it easy for you. Add 1-2 tsp of strawberry jam, depending on how much it fits in the hole.
  • For frosting I made a chocolate ganache: heat the liquid cream and add it over the chocolate pieces and mix until the chocolate is melted. Let the ganache cool for 10-15 minutes and then mix it with mascarpone cheese. Pipe the frosting onto the cupcakes.
