Pistachio and Chocolate Cake
Who doesn't love a good cake, especially when is easy to make? I know it might seem complicated, but I promise you, making a cake is easier than you believe. I made this pistachio and chocolate cake and the combo between chocolate, pistachio and some strawberries was extremly good. So don't be afraid to try making your own birthday cake at home, this recipe is so easy and delicious, is impossible to fail.
Ingredients
Batter
- 9 eggs
- 220 flour
- 150 g sugar
- 2 tsp vanilla extract
- 10 g baking powder
Chocolate cream
- 200 g dark chocolate
- 200 g cream cheese
- 150 g mascarpone cheese
Pistachio cream
- 300 g pistachio spread
- 200 g cheese cream
- 200 g strawberries
Instructions
Batter
- Separate the egg whites from the egg yolks and mix them into foam. When the egg whites have become stiff foam, add the sugar and mix until the sugar is melted. Add the yolks and with using of a spatula incorporate them with the whites. Gradually add the flour and mix gently, with movements from the bottom up so as not to break the air bubbles. Finally, add the vanilla extract and baking powder.
- Divide the composition into 3 equal parts and bake each top for 20-25 minutes at 180 degrees.
Chocolate cream
- For the chocolate cream, mix the cream cheese with the mascarpone until incorporated. Melt the chocolate in a steam bath and put it on top of the mascarpone and cream cheese mixture. Mix until we have a homogeneous composition.
Pistachio cream
- For the pistachio cream, mix the cream cheese with the pistachio spread until the composition becomes homogeneous composition. Cut the strawberries into smaller pieces and mix them with the pistachio cream.
Assembling the cake
- To assemble the cake put a cake top. Optionally you can syrup it with milk or any fruit compote you like. Add the pistachio cream, put the second layer on top, put the chocolate cream and put the last layer on top. You can dress up the cake with whatever you want. I decorated it using the creams that I put in the cake, which I put with the help of a bag, but you can give free rein to your imagination and make it fixed according to your preferences.
