Berries Jam Crumble Bars

A crumble is a dish that can be made in a sweet or savoury version, although the sweet version is much more common. A sweet variety usually contains stewed fruit topped with a crumbly mixture of fat (usually butter), flour, and sugar. A savoury version uses meat, vegetables and sauce for the filling, with cheese replacing sugar in the crumble mix. The crumble is baked in an oven until the topping is crisp. The dessert variety is often served with ice cream, cream, or custard. The savoury variety can be served with vegetables.
Crumbles became popular in Britain during World War II when the topping was an economical alternative to pies due to shortages of pastry ingredients as the result of rationing. The Second World War lasted for six years and resulted in countless casualties. Often dubbed as one of the darkest chapters in history, the Second World War brought the world to a standstill; shops were shut, people were left unemployed. As the war progressed, food scarcity became a major scare and due to inflation and rationing, the accessibility to basic food ingredients became a problem. In these hostile times, British housewives came up with many recipes; some of these recipes were lost in time, but some stayed and even gained cult status with time. One such British recipe is that of apple crumble.
Crisp, crumbly and ever-so-delightful, apple crumble is probably one of the easiest dessert preparations around. But back in the day, this dessert among a few others brought a smile on many faces in days marked by gloom and despair. Due to strict food rationing, British households had a limited access to basic ingredients like flour and sugar. Indulgent treats like cakes and puddings were becoming a luxury not everybody was able to afford. People started missing their baked and sugary goods. And, in a bid to have something as yummy, with the limited number of ingredients, apple crumble became one of the most sought-after dishes of the time.
Crumble is a very popular dessert nowadays. Many people love it and make it because is a simple recipe and requires only a few ingredients. Crumble is very versatile, it can be made with any fruits, coconut flakes, almond flakes, nuts, oat flakes and so on. Crumble bars are also very popular, people started to make this bars based on the original recipe of crumble.
I love crumble and to spice up this recipe a little bit, I tried to make a different version of crumble bars. I made berries jam crumble bars and I can’t describe how good it was. The recipe is simple and so tasty, it deserves a chance. I promise you will love it.

Ingredients
  

Jam

  • 200 g raspberry
  • 200 g blueberry
  • 200 g blackberry
  • 30 g corn starch

Base

  • 200 g butter
  • 150 g flour
  • 100 g oat flakes
  • 60 g coconut flakes
  • 30 g almond flakes
  • 50 g brown sugar

Crumble

  • 50 g butter
  • 30 g oat flakes
  • 20 g almond flakes
  • 20 g coconut chips
  • 20 g butter
  • 20 g brown sugar

Instructions
 

Berries Jam

  • For the jam add the fruits in a pan and cook it on medium heat until until the fruits begin to leave the juice.
  • Mix the corn starch with 3-4 tablespoons of berries juice, add the corn starch over the berries and let it cook on low heat until the composition begins to thicken. Let it cool until it reaches room temperature.

Base

  • In a bowl mix well all dry ingredients. Add the room temperature butter and mix until all ingredients are incorporated. The composition should be well bound and easy to handle.

Crumble

  • For the crumble mix all the ingredients in a bowl until you get a sandy composition.

Assembly

  • Add the base composition in a tray lined with baking paper and spread it well all over the tray by pressing with your palm to be uniform.I used a 24×20 tray.
  • Add the jam over the base and spread it well over the entire surface.
  • Add the crumble from place to place over the jam layer. Cook everything for 35-40 minutes at 180 degrees. Let the cake cool before you cut it. You can serve it with ice cream or simple.
