
Vanilla and Chocolate tart
Who doesn't love a good tart, especially when it has a lot of fresh fruits? Well, I guess we all love it. Today I'm gonna tell you how to make a delicious and good looking tart. The vanilla and chocolate cream next to fresh fruits is a great combo that you will love for sure. The secret for a good tart is to choose seasonal fruits.Don't be afraid to make your own crust for the tart, is easier than you think. The process is simple, but be sure to weight the ingredients because you don't want the crust to be too dry. Now, let's make this delicious tart.
Ingredients
Dough
- 100 g cold butter
- 180 g white flour
- 1 egg
- 3 tbsp cold water
- 50 g powdered sugar
- 1 tsp vanilla extract
Vanilla cream
- 500 ml milk
- 5 egg yolks
- 40 g sugar
- 65 g flour
- 2 tsp vanilla extract
Chocolate cream
- 500 ml milk
- 5 egg yolks
- 40 g sugar
- 55 g white flour
- 35 g cocoa
Decoration
- 5 strawberries
- half of a peach
- 150 g cherries
- chocolate
Instructions
Dough
- In a bowl, mix the cold butter cut into cubes with flour until you get a sandy consistency. Add the egg, continue to knead, add the sugar, baking soda, vanilla extract and finally the water. If you still need water, add 1-2 more tablespoons.
- Refrigerate the dough wrapped in cling film and leave for at least 30 minutes.
Vanilla cream
- Heat the milk with the vanilla extract.
- In a bowl, mix the yolks with the sugar with a mixer until the yolks lighten in color and the mixture becomes frothy.
- Gradually add the flour and mix for a few seconds, until the flour is incorporated. Pour the mixture over the milk and mix until the cream thickens.
- Cover with plastic wrap and leave it to cool.
Chocolate cream
- Do the same steps as for vanilla cream, what you have to do more is to add the cocoa. Cover it with plastic wrap and leave it to cool.
Tart
- Spread the dough in a thin sheet on a surface lined with flour and place it in a tray lined with baking paper. Add a baking paper on the dough, put rice/beans and put the tray in the oven for 20 minutes. The rice/beans on the dough stop the dough from growing and this is how you get a thin and crunchy dough.
- After the crust is baked, let it completely cool. Add the vanilla cream, then the chocolate cream and the fresh fruits on top.
