Vanilla and chocolate tart

A tart is a baked dish consisting of a filling over a pastry base. The filling can be sweet or savoury and you can choose any type of filling you want. The combination between vanilla cream, chocolate cream and fresh summer fruits is a must try, it's creamy, crunchy and very tasty. This tart is easy to make and it takes just a few and simple ingredients.

Ingredients

Dough

  • 100 g cold butter
  • 200 g white flour
  • 1 egg
  • 3 tbsp cold water

Vanilla cream

  • 500 ml milk
  • 5 egg yolks
  • 40 g sugar
  • 65 g white flour

Chocolate cream

  • 500 ml milk
  • 5 egg yolks
  • 40 g sugar
  • 55 g white flour
  • 35 g cocoa

Decoration

  • 5 strawberries
  • half of a peach
  • a few cherries
  • chocolate

Instructions

Dough

  • In a bowl, mix the cold butter cut into cubes with flour until you get a sandy consistency. Add the egg, continue to knead, add the sugar, baking soda and finally the water. If you still need water, add 1-2 more tablespoons.
  • Refrigerate the dough wrapped in cling film and leave for at least 30 minutes.

Vanilla cream

  • Heat the milk with the vanilla essence.
  • In a bowl, mix the yolks with the sweetener with a mixer until the yolks lighten in color and the mixture becomes frothy.
  • Gradually add the flour and mix for a few seconds, until the flour is incorporated. Pour the mixture over the milk and mix until the cream thickens.
  • Cover with plastic wrap and leave it to cool.

Chocolate cream

  • Do the same steps as for vanilla cream, what you have to do more is to add the cocoa. Cover it with plastic wrap and leave it to cool.

Tart

  • Spread the dough in a thin sheet on a surface lined with flour and place it in a tray lined with baking paper. Add a baking paper on the dough, put rice/beans and put the tray in the oven for 20 minutes. The rice/beans on the dough stop the dough from growing and this is how you get a thin and crunchy dough.
  • After 20 minutes, add the vanilla cream and the chocolate cream and leave it in the oven for more 20 minutes.
  • Let the tart cool a few minutes and add the fresh fruits and chocolate on top.
