My love for quesadilla started when my bf saw a recipe and asked me to make it. Since then, quesadilla became one of my favourite food. I usually make vegetarian quesadillas and I try different combinations. Some are “meh”, some ar amazing, as this mushroom, avocado and cheddar quesadilla. I promise you will like it, recipe is very simple.
Mushrooms quesadilla
Ingredients
- 2 tortillas
- 300 g mushrooms
- 250 g cheddar cheese
- 2 avocado
- 1 tbsp olive oil
- 2 cloves of garlic
- 1 tsp salt
Instructions
- Wash the mushrooms, cut it and cook in a pan in olive oil. Add salt and let the mushrooms on the fire until they are completely cooked.
- Crush the avocado, add salt and crushed garlic and mixed until you got a paste.
- Put a tortilla in a grill pan, add half of the avocado paste, mushrooms and cheddar cheese, folded it and left it on each side for 2 minutes. To the same for both tortillas. The end result was a delight.
