Vegetarian quesadilla
If you're running out of ideas and don't know what to cook for dinner or lunch, I have a suggestion I'm pretty sure you're gonna like: vegetarian quesadilla. Quesadilla is a mexican dish usually made with red beans and beef but what is great about it is that you can use any combination you like, you won't get bored of enjoying any other tipe of quesadilla.
Ingredients
- 2 tortilla
- 100 g avocado
- 200 g mozzarella
- 100 g fresh spinach
- 1 onion
- salt
Instructions
- In a pan add a tortilla and then add the ingredients: mashed avocado, mozzarella, spinach, onion and a bit of salt. On the top add the other tortilla and let it cook for 3-5 minutes on low heat.
- Using a plate, turn the quesadilla with the uncooked part down and let it cook for 3 minutes. You can have some salsa with this quesadilla, it's a perfect match.
