
Asparagus Toast
It's the asparagus season, which means it's time for asparagus recipe. The first recipe with asparagus I ever tried is asparagus toast. I liked it so much that I wanted to share it with you. Ingredients
- 2 bread slices
- 10 asparagus stalks
- 30 g butter
- 2 eggs
- 2 tbsp cheese cream
- salt
- pepper
Instructions
- Remove the tough end from the rest of the stalk by either cutting or snapping it off. If you use a knife, then cut 2-3 cm off the bottom, depending on where the green fades into white.
- In a pan add water and salt. When water starts to boil, add the asparagus and let it boil for 3-4 minutes on low heat.
- In a pan add the butter, let it melt and put the asparagus. Let it cook for about 5 minutes on low heat.
- Remove the asparagus and fry the eggs in the same pan. Fry them with a lid on top for 3-4 minutes if you prefer them softer or 5-7 minutes if you prefer them more solid.
- Take the eggs out of the pan, put the slices of bread and fry them for 1-2 minutes. Grease each slice with cream cheese, add the asparagus, egg and freshly ground pepper.
